Stewart's arrival will help lighten the burden of injuries within the Sussex dressing room, with the likes of Ollie Robinson and George Garton continuing to sit out.
Performance director at Hove, Keith Greenfield, said: "To be able to get a player of Grant's all-round ability is fantastic, especially as it will help to give balance to our side."
Sussex sit bottom of Division Two after a defeat and a draw in their first two fixtures of the new campaign.
